A new grab and go spot called So+Lo’s is preparing to open March 12 at 629 First Ave. N in downtown Fargo, introducing Icelandic inspired cuisine to the area. Owner Jen Nelson says the idea came after a trip to Iceland, where she reconnected with her heritage and fell in love with the country’s traditional food culture. A featured menu item will be Skyr, a thick cultured dairy product that’s a staple in Iceland, with recipes rooted in authentic preparations still used today.

Her husband, Chris Nelson, is leading the culinary side, crafting fresh soups, sandwiches, and other quick options alongside the Icelandic specialties.
